M&S sold a similar salad in it's stores which was my favourite. I decided to recreate the recipe myself and it went very well. It has an isralian flavour twist.
Preparation time: 5 mins
Cooking time: 20 mins
Serves: 2
Difficulty: Easy
Hotness Level: Not Hot

Ingredients

IngredientAmount
Giant Couscous80g
Goats Cheese40g
Red Pepper1pc
Fresh Pasley10g
Fresh Basil15g
Lemon Juice1g
White Wine Vinegar1tsp
Extra Virgin Olive Oil1tsp

Step-by-Step

Step 1:
Turn on the oven 180 C. While it's getting hotter cook the dressing: chop basil leaves, add olive oil, balsamic vinegar and lemon juice. Add salt and pepper. Mix well, leave aside
Step 2:
Place pepper in the oven for 20 min
Step 3:
While cooking the peppers, boil 160 ml of water , add salt and couscous in the sauce pan. Boil for couple of minutes to keep the texture hard. Place couscous in the strainer and pour the cold water over it.
Step 4:
Slice the pepper and cut parsley leaves. Mix them with couscous and salad dressing.
Step 5:
Add pieces of goat cheese but don't mix it well as it can loose it's structure
Step 6:
Serve and enjoy
