Step-by-Step
Step 1:
Turn on the oven for 150 C. Slice half of orange and leave for decoration. For the dressing take juice from another half of orange, 1 tsp whograined mustard and 1 tbsp of olive oil, add salt and pepper and mix well. Leave aside.
Step 2:
Season the duck brest with salt and pepper, fry on each side for 3 min. Pleace in the oven and bake for another 5 min. Slice it.
Step 3:
Grill slices of orange in the oven for 5 min until caramelized. Roast the walnuts and chop into the small pieces.
Step 4:
Place rocket leaves into each bow, add blueberries, chopped strawberries, chopped pear and walnut pieces and pieces of duck brest.
Step 5:
Decorate with grilled slices of orange.
