Mexican sauce with passata and chipotle makes the pork meatballs taste very juicy. I usually add frozen sweetcorn to the sauce 2 min before serving, I prefer it more than canned sweetcorn, give it a try. Serve with rice or courgette pasta.

Step-by-Step

Step 1:
Remove leaves from coriander. Chop the garlic and coriander stalks finely and add it to the mince pork. Add salt and pepper, 2 tbsp of chipotle paste, mix well and form into small balls
Step 2:
Heat up the pan, add olive oil and fry the meatballs for 10 min. Add passata, 150 ml of water, 2 tbsp of chipotle paste, 1tsp of sugar (or sugar replacement), salt and pepper to the pan and simmer for another 10 min.
Step 3:
Slice the spring onions, cut coriander leaves and add to the sauce. Add spinach and sweetcorn to pan and simmer for 2 min.
Step 4:
Sauce is ready, serve it with rice or pasta made of spiralizer courgette
