Apple and pork are matching very good together, to remove the sweeteness of the apple add mustard and salt to the sauce. This dish can be served with cauliflower mash, potato mash or green vegetables.

Step-by-Step

Step 1:
Prepare the sauce: chop the garlic and onion, cut half of the apple into small cubes and leave half aside. Add a bit of olive oil and butter to a small sauce pan and fry onion and garlic for 2 minutes, add apple cubes and fry for another 3 min. Add mustard, salt, pepper and mix. Add half of the cream and simmer for 2 min. Leave aside.
Step 2:
Season the pork with salt and pepper. Place a pan on the hob, add a bit of olive oil, fry the pork on each side for 3 min. Remove leaves from thyme and add to the pan together with a bit of butter. Fry pork on each side for another 2 min. Slice half of the apple and add to the pan for another 2 min.
Step 3:
Warm up the sauce, add the rest of thyme leaves, add another half of the cream, mix and season with salt and pepper if needed. Keep on the hob for 2 min.
Step 4:
Serve pork with the sauce and potato mash, cauliflower mash or green vegetables. Decorate with fried slices of apple.
