Ingredients

Step-by-Step

Step 1:
Place a small saucepan on the hob, add cold water, salt and boil the cauliflower for 10 minutes
Step 2:
Prepare the sauce: chop onion and garlic, in the small saucepan add 1 tbsp of butter and fry the onion and garlic for 5 min, add half of chicken stock and fry for another minute. Zest 1 orange, cut it into half, remove seeds, squeeze the juice into onion and garlic, add zest and simmer for another 2 minutes. Leave aside. Blend the sauce if you prefer smooth.
Step 3:
Prepare hob for 200 degrees Fan. Add salt and pepper to the duck breasts, place cold pan on the hob, place duck breasts on fat side and fry on small heat until fat melts. Turn it over and fry for another 3 minutes. Place the duck into the oven for 8-10 min on the fat side.
Step 4:
Blend drained cauliflower with salt, butter and a bit of water if needed, cut the duck and enjoy with cauliflower mash and orange sauce.
