Step-by-Step

Step 1:
Chop red onion and garlic, heat up a sauce pan, add olive oil and fry onion and garlic for 2 min. Add pork mince, season with a little bit of salt and pepper and fry for another 6 min
Step 2:
Add stock cube to the pork and mix well, add oregano, ground cumin and tomato puree. Chop the red pepper and add to the pork with 250 ml of water. Close the lid and simmer for 20 min.
Step 3:
Prepare the rice: place basmati rice in a pot, add salt, coriander and turmeric and add 200 ml of water. Close the lid and boil until water is absorbed.
Step 4:
Zest orange and lime and leave aside. Squeeze juice from 1 lime and half of orange and add to the pork stew.
Step 5:
Before serving the stew add black olives and simmer for another 2 min. Serve stew with rice and sprinkle zest on the top. Enjoy
