This is probably the best recipe for all sort of keto low carb pancakes, they are so ideal that noone feels a difference.

Ingredients

Cream Cheese200g
Single Cream100ml
Erythritol1tsp
Almond Meal200ml
Eggs6pc
Extra Virgin Olive Oil1tbsp

Step-by-Step

Step 1:
Mix the eggs, probably best with blender, then add single cream, erythritol (or other sugar replacement), olive oil, a bit of salt. Mix well
Step 2:
Add almond meal (or flour) to the dough and mix well.
Step 3:
Heat up the pan, pour in a bit of olive oil, then about 100 ml of pancake (depends on the size of the pan) mixture and fry on both sides. Try not to make it dry as the longer pancake in the pan the more dry it is.
Step 4:
Enjoy! Serve with sauce made of fresh strawberries, mint and erythritol
